A 48" manual gas griddle answers a volume problem: four 30,000 BTU/Hr burners, 120,000 BTU/Hr total, spread across a 0.75" thick polished steel plate. Each 12" section has a manual control of its own, so four temperatures can run side by side through a rush. Cafeterias and catering kitchens working long breakfast services are the usual buyers.
