All-Clad Copper Core features a 5-ply construction that combines the superior heat conductivity of copper with the cleaning ease of 18/10 stainless steel. The five-ply construction consists of 18/10 stainless steel interior, copper core sandwiched by two layers of aluminum and magnetic stainless steel exterior. Copper is known to be the most superior heat conductive metals providing maximum temperature control. The unique layered construction of copper & aluminum allows rapid and even heat distribution during the cooking process. Other features include riveted stainless steel long handles that stay cool and rolled edges to prevent dripping when transferring contents. All- Clad products are known for two points. Being expensive and very well made. We have several pieces from the copper core line at home and I can’t recommend them enough. Keep them clean, follow the manufacturer’s guidelines on maintaining them and they will last longer than you.

This is fantastic for a family of 4 or 5 for a pasta dish. I like to cook the pasta in the sauce like a risotto. This is ideal for this kind of technique because of the round shape. For example, I sear the guancale (or bacon) in the pan. Remove a bit of fat and put the pasta in the dish with the egg/parmesan mix. I can stir and finish the pasta cooking directly in the pan. It is also perfect for a risotto for 4 or 5 portions. It is not to heavy and works fine on induction.
