All- Clad products are known for two points. Being expensive and very well made. We have several pieces from the copper core line at home and I can’t recommend them enough. Keep them clean, follow the manufacturer’s guidelines on maintaining them and they will last longer than you.

This is fantastic for a family of 4 or 5 for a pasta dish. I like to cook the pasta in the sauce like a risotto. This is ideal for this kind of technique because of the round shape. For example, I sear the guancale (or bacon) in the pan. Remove a bit of fat and put the pasta in the dish with the egg/parmesan mix. I can stir and finish the pasta cooking directly in the pan. It is also perfect for a risotto for 4 or 5 portions. It is not to heavy and works fine on induction.
