Miyabi - 5000MCD 9" Chef Knife 24cm - 34373-243
Model Number: ZWIL-34373-243
Description
This chef’s knife is an all-rounder tool, designed for those who prefer a large-bladed knife. Chop herbs, dice onions, and mince garlic with this workhorse blade, and then transport ingredients on the generous blade from the cutting board to a bowl or pan.
Handcrafted in Seki, Japan, top-of-the-line MIYABI Birchwood is a work of culinary art. Both blade and handle are crafted from the most precious materials, which shape their striking appearance.
More than meets the eye, the potent core of SG2 micro-carbide powder steel is protected by a stunning 100-layer flower Damascus pattern. MIYABI’s innovative, CRYODUR® ice-hardening process locks in the blade’s long-lasting sharpness.
The scalpel-like blade is complemented by an equally striking and comfortable Karelian (Masur) Birch handle. A prized material for knife handles, Karelian Birch is also the only wood ever used in a Fabergé egg. Exquisite and ergonomic, MIYABI Birchwood knives feel as good as they look.
- SG2 micro-carbide powder steel blade for scalpel-like sharpness
- 101-layer flower Damascus design with katana edge is both beautiful and durable
- Authentic thin Japanese blade profile with a 9.5° to 12° edge
- Hand-honed using the traditional Japanese three-step Honbazuke process
- CRYODUR® ice-hardened to Rockwell 63 for long-lasting sharpness

FASCINATE FROM THE FIRST CUT
Under the trademark MIYABI, some of the world’s sharpest blades are created; because the Japanese recognized long ago the importance of sharp knives for retaining the taste and texture of delicate dishes like sashimi. With an original MIYABI knife, you will have the exact same realization.
STEP BY STEP BY STEP
It takes more than 100 steps and 42 days to make one knife worthy of the MIYABI brand. Each authentic knife is crafted true to Japanese tradition by skilled artisans and forged from premium steels and modern state-of-the art technology. Each blade boasts long-lasting sharpness, exceptionally-precise cutting and superior performance.
JAPAN'S CITY OF BLADES
Seki is Japan's capital of sword & knife production. In 2004, the ZWILLING Group acquired a knife factory in Seki. MIYABI incorporates the German engineering excellence perfected in ZWILLING’s workshops with the finest Japanese craftsmanship honed in Seki. This esteemed collaboration brings the very best quality of Japanese knives to chefs worldwide. And to you.
SCALPEL-LIKE SHARPNESS
Our knives were developed so that professional chefs and home cooks around the world could experience how sharp knives enhance the plate and please the palate. MIYABI merges the treasured traits of samurai swords - exceptional sharpness, tradition, craftsmanship, and performance - with contemporary design for the ultimate kitchen knives.
